Coconut Truffles

Coconut lovers will rejoice over these easy to make, decadent bites. Perfect for snacks, dessert or anytime you need a sweet treat. Made with zero refined sugar they can be left in their simple state or dipped in chocolate for another level of deliciousness! Made from simple ingredients they come together easily and can be ready in no time!

Ingredients

3 1/2 cups unsweetened shredded coconut

1 tsp coconut extract

1 tsp vanilla bean paste

1/2 tsp salt

1/3 cup tahini

1/2 cup brown rice syrup

*1/2 cup roasted almonds

*Optional: Vegan chocolate chips I tend to use Enjoy Life brand Mega Chunks

In you KitchenAid Stand Mixer with the paddle attachment add the coconut and all other ingredients. Mix on low until the mixture comes together and all the ingredients are fully incorporated.

Spray a 1 Tbl cookie scoop with spray oil and scoop the mixture into balls and set onto parchment paper. If you’re using almonds carefully press a roated almond into the top of each truffle and then place them in the freezer for 10-15 min while you melt chocolate. Once partially frozen dip the bottom of each truffle into the chocolate. Once you’ve dipped them all, use the remaining chocolate to drizzle over the truffles, pop them back in the freezer to set and then place them into a storage container and keep in the fridge.

They should be fine up to two weeks but they never last that long in my house!
