Chickpea 'Faux Tuna' Salad
/When you need the aquafaba from a can of chick peas and you’re not sure what to do with the actual chickpeas, this quick and easy recipe will be a household favorite. Between two slices of bread, in a wrap or in a lettuce wrap or served as a side dish, it’s flavorful, hearty and will have you going back for seconds!
Ingredients
1 can chickpeas drained and rinsed
1 stalk celery minced
1/4 cup minced red onion
4 Tbl Vegan Mayo (we use Follow Your Heart Veganaise)
1 tsp fresh squeezed lemon juice
1/4 tsp salt or veggie salt
1/4 tsp ground black pepper
1/4 tsp smoked paprika
1/4 tsp dill
1/4 tsp garlic powder
In a flat bottomed bowl, use a hand masher to mash chickpeas until they are broken up (leave some whole if you prefer) add all other ingredients and mix well to combine. Use on a sandwich, in a wrap or lettuce leaf for extra crunch and add any of your favorite toppings!
